Mountain Mornings
Our bakers start their shift at four in the morning, when the valley is still and the water in the brass kettle is barely warm. By the time guests stir, there is a row of sourdoughs cooling on the counter and the air has changed quietly into a memory of butter, vanilla and stone-milled flour.
Nothing in the bakery is hurried. Doughs are folded by hand, rested overnight, and finished with mountain honey, hand-churned butter and seasonal fruit from the same orchards our chefs visit each week.
